Today marks five years since my celiac diagnosis.

It used to bother me like crazy that so many of my favorite foods were suddenly taken away.

But five years ago, I weighed 236 pounds, had major skin issues, suffered severe anemia—apparently, it’s bad when your colon is bleeding 😏—and generally felt like a slug.

So I can’t have gluten.

Yes, it does put a damper on the whole restaurant experience, but here I am on Kauai eating apple bananas, papaya, pineapple, and spinach salads in our condo on the beach.

Not only that, Ken just bought me a $100 dress at a boutique here in town because he loves me.

Kind of hard to complain now, isn’t it.
